Cooking & Math:
Make chocolate chip cookies, chocolate chip pan cookies or any other type of cookie like in the books (or oatmeal raisin cookies).
As you make the cookies, have the children measure the ingredients.  Leave the chocolate chips or raisins out until the end.  Have the children count a certain amount of chocolate chips or raisins and have them place them on each cookie.
For more of a challenge, say to them 1 + 4=__, 2 + 2=__, 3 + 2=__, 2 + 3=__, 4 + 1=__, 5 + 0=__, etc.  You don't want to have to many chocolate chips or raisins in each cookie so be specific so they don't go overboard.

If You Give A Mouse A Cookie or The Best Mouse Cookie Math Activity
To extend this activity, it can be a game or center.  On lost of 3x5 inch index cards, write numbers, or addition problems, and/or subtraction problems.  Go as high as you want.  Using felt, make a large cookie or color a thick paper plate.  Cut out small pieces of black felt (or black construction paper and laminate them) to make chocolate chips.  Have the children do the math problems.  You can even use dice and have the kids count the number of spots and place that many chocolate chips on the felt or paper plate.
